Soy and miso salmon

 

 

Another creation/ demonstration from chef Tom Straker here. We have used salmon, but this is a great recipe for fish in general and would work well with Bass, Cod or Tuna. Serve with sticky sushi rice and some wilted greens.

Ingredients: Soy Sauce, miso paste, runny honey, garlic, ginger, limes, spring onions. red chilli and sesame seeds for garnish

1) Pan fry your salmon: season your fish with salt and olive oil. Start skin side down until a good colour develops around the skin (about 5 mins) then turn it over for the last few mins. Grilling or baking equally as good.

2) Add soy sauce, grated (or finely chopped) ginger and garlic, honey and miso paste and lime juice to a frying pan. 

3) Place the pan on a low heat and mix the ingredients as it reduces down to a thin syrup 

4) Place your cooked fish in the glaze and baste for the last minute

5) Remove from the heat, plate up your fish and garnish with thinly sliced chilli, spring onion and sesame seeds.

Enjoy with sticky rice and wilted Asian greens, or stir fried veg and noodles, or a papaya salad. Basically delicious with everything!
