Cod with leek and 'nduja lentils

A great hob top, 1 pot dish. Easy to prepare and delicious. A hint of charcuterie spice form the 'nduja works really well with cod, chorizo or bacon would make an excellent substitute.
Ingredients: Cod, 1 tbsp 'nduja , 1 finely chopped leek, 1 finely chopped onion, samle amount of finely chopped celery, puy lentils for 2 , 1l vegetable stock (or water). a splash of cider vinegar. chopped parsley.
Start by finely chopping the leek, onion and celery 
 
To some hot oil, gently fry the 'nduja until it breaks up
Then add the diced leek onion and celery, and leave to soften
Once veg has softened, add the lentils and stir them in 
After 30 seconds of gentle toasting, add the stock
Bring the liquid to a simmer and then leave on a medium heat with a lid on to cook the lentils,
add water to stop them drying out if needed. It should take 25 mins or so to cook, add bit of cider vinegar at some point
After about 20 min, add parsley, mix it through and then nestle the cod (season first with salt and pepper) into the lentils and cook for the last 5- 6 min with the lid on.
Plate up, garnish with some parsley and enjoy!
